Put a pan on medium-high heat and let it heat. Add the oil.When the oil is hot, add the Chile and garlic and cook until the chili is somewhat burned and the garlic is golden brown.Add chicken and stir-fry for 30 seconds or so.Add the sugar, soy sauce and fish sauce and stir for three to five minutes or until the chicken is cooked through.Add the onion and stir fry for another 30 seconds.
